Grown in the shade,

For the last twenty-one days before harvest, our tea is hidden from the sun. Starved of light, the leaf floods itself with chlorophyll and L-theanine - the source of matcha's deep colour and its calm, even lift.

We take only the first flush: the youngest, softest leaves of spring, hand-picked from terraced hills above Wazuka village, Uji region, Kyoto.

Thirty grams an hour.
We don't rush stone.

Each leaf is de-veined, de-stemmed and slow-dried into tencha, then fed between two granite wheels turning barely faster than a clock's hand. Push the stone and you scorch the powder; we let it take its time.

What falls is impossibly fine: a powder you feel rather than see, vivid and weightless, with no bitter edge.
